Through months and months of research, testing recipes, and eating an enormous amount of cheese, Crooked Face Creamery came up with their own signature Gouda-style cheese. It’s aged at least 60 days, and is not as mild as a traditional Gouda. It has the elasticity and texture, but it’s distinct buttery flavor sets it apart. It’s incredibly versatile – perfect as a table cheese, as well as in grilled sandwiches, burgers, omelets, salads and even pasta.
This season at the Skowhegan Farmers’ Market, Amy & Josh will be offering a different variety of their signature aged Gouda – including a red pepper, rosemary, herbs de provence, and a savory “wood-fired” favorite. Every variety is aged with a natural rind for at least 60 days.
Whole Milk Ricotta
& Ricotta Salata with fresh seasonal herbs
Crooked Face Creamery’s fresh Ricotta is another signature cheese – a combination of recipes Amy tested and tasted over time to perfectly convert the rich in butterfat whole Jersey milk to rich flavorful Ricotta.
Ricotta is normally made with whey left over from making other cheeses, but Amy makes hers with fresh, whole Jersey milk, which enriches the flavor, as ricotta tastes and smells of the milk from which it’s made. They will be selling Whole Milk Ricotta in traditional (and returnable) cheese tins, as well as their own rendition of Ricotta Salata – a pressed ricotta with fresh seasonal herbs, made for baking, eating on a cracker, or by the spoonful.
Other Dairy Products
Farmhouse butter, yogurt, and specialty spreads
To mix it up, Crooked Face Creamery sometimes offers small batches of dairy products and fresh cheeses including butter, yogurt, and the occasional specialty spread.
Crooked Face Farmhouse Butter is a delightful treat Amy makes in small batches. Jersey milk is ideal for butter, inches of thick heavy cream rises to the top of every gallon of milk, which she then whips into a lightly salted spread. From the leftover low fat milk, Amy makes tasty light yogurt and yogurt cheese spreads with a variety of fresh herbs and edible flowers.
